Pork or Chicken Adobo for Christmas Dinner

Chicken Adobo
Filipino Christmas dinner will not be complete without adobo, pancit (noodles), and lumpia (egg roll). Below is a recipe very similar to Evelyn’s version of a healthy, Americanized version of adobo.1 Try it. Rachel’s friends in California and the Philippines love it! And YouTube has an appetizing chicken adobo cooking demonstration.

Ingredients (6 servings):
3 skinless chicken breasts, fat trimmed off
7 garlic cloves, crushed
1 tablespoon canola oil (not shortening or other vegetable oils)
½ cup low-sodium soy sauce
1½ cups white vinegar
1 tablespoon peppercorn
4 bay leaves
3 hard-boiled eggs (optional)

Directions:
Heat nonstick pan, add canola oil and garlic. Stirfry for 30 seconds. Add chicken thighs and breasts and brown about 1 minute on each side.

Add soy sauce, vinegar, peppercorn and bay leaves to chicken. Bring sauce to a boil and simmer about 15 minutes or until chicken is cooked through. Serve with enriched brown rice.

Optional:
Add chopped hard-boiled eggs during last 5 minutes of cooking. Evelyn also drains the sauce into a separate bowl for those who don’t want a lot of sauce.

Hopefully, neither Filipinos nor Americans are offended by the video. I’m guessing that this guy has a Filipino wife or many Filipino friends. He speaks better Tagalog than my kids, but he can’t beat Oli’s Tagalog pronunciation!

That is what we had this morning after the church service at SDG (they served a brunch): chicken adobo, rice, pancit, two huge lechons! Now we have to figure out how to do this in the US next year on furlough. 🙂
